Foodie Post : Blueberry Chia Pudding


Good morning everybody! 
I am writing this after I just ate this delicious thing on the picture above, blueberry chia pudding. I had this for breakfast two days in a row now and it's my favorite breakfast...ok actually second favorite, the first place take the pancakes :D It's grain, gluten, sugar, diary, and probably a lot of other things free and the best thing is, that it's really filling. Now there are a lot of variations of this, you can put inside whatever fruit/nuts/toppings you want, below is the recipe for my favorite version. 
Ingredients:
1 cup unsweetened almond milk
1 medium banana
2-3 tablespoons chia seeds
one handful of blueberries
1 tsp vanilla extract
Dash of cinnamon
5 almonds
Coconut flakes

Blend cinnamon, vanilla extract, almond milk and half of banana so you get this fluffy, foamy liquid. Put it in a sealed container,  (it looks so pretty, when you are eating it out of a mason jar!) mix in the blueberries and chia seeds, close the lid and shake it a bit. Put it in the fridge for about one hour or overnight (great to make ahead if you're in a hurry). In the morning, top with the other half of banana and your favorite topping, I used chopped almonds and coconut flakes. In the meantime, your coffee is done and you are ready to enjoy the oh-so-good and healthy breakfast :)
